The best way to start out making cajun dogs is by finding the best andouille sausage you can find. (We like to get ours from Howe Farms.) Andouille sausage is a cajun sausage that can vary in heat depending on where you get it. It can be served on a bun or sliced up and put on some of you favorite cajun dishes like jambulaya.
We have decided to put it on a bun today with our homemade remoulade, sautéed veggies and shrimp. The great thing about this recipe is that you can make this on the grill, griddle or stove top so you can serve this all year round.
Cajun Dogs
Grilled andouille sausage topped with homemade remoulade and cajun shrimp
Ingredients
- 6 Links Andouille Sausage
- 6 Hoagie or other sausage roll
Vegetable Toppings
- 1 Green Pepper Diced
- ½ White or yellow onion Diced
- 2 stalks Celery Diced
- 15 oz Can of Fire Roasted Tomatoes Diced
Shrimp
- 18 Shimp
- Colonel De Spices Bayou Blend or Similar Cajun Seasoning
Remoulade Sauce
- 1 cup Mayo
- 2 tbsp Dijon Mustard
- 1 dash Worcestershire sauce
- 1 dash lemon juice
- 1 tbsp Prepared horseradish
- Your favorite hot sauce to taste
Instructions
Create Remoulade
- Combine remoulade ingredients in a bowl and set aside1 cup Mayo, 2 tbsp Dijon Mustard, 1 dash Worcestershire sauce, 1 dash lemon juice, Your favorite hot sauce, 1 tbsp Prepared horseradish
Cooking Andouille
- Cook the andouille sausage using your preferred method (grill, griddle, cast iron pan, etc)6 Links Andouille Sausage
Prepare the toppings
- Sauté green pepper, onion, and celery until softened and season with Bayou Blend to taste.1 Green Pepper, ½ White or yellow onion, 2 stalks Celery
- Mix fire roasted tomatoes with pepper, onion, and celery mixture. Cook for a few minutes15 oz Can of Fire Roasted Tomatoes
Prepare Shrimp
- Cook shrimp and season with Bayou Blend to taste. You only need to warm shrimp if using precooked.18 Shimp, Colonel De Spices Bayou Blend or Similar Cajun Seasoning
Assemble
- Place cooked sausage in roll, top with vegetable mixture, shrimp, and top with remoulade.6 Hoagie or other sausage roll
