Grilled andouille sausage topped with homemade remoulade and cajun shrimp

- 6 Links Andouille Sausage
- 6 Hoagie or other sausage roll
Vegetable Toppings
- 1 Green Pepper Diced
- ½ White or yellow onion Diced
- 2 stalks Celery Diced
- 15 oz Can of Fire Roasted Tomatoes Diced
Shrimp
- 18 Shimp
- Colonel De Spices Bayou Blend or Similar Cajun Seasoning
Remoulade Sauce
- 1 cup Mayo
- 2 tbsp Dijon Mustard
- 1 dash Worcestershire sauce
- 1 dash lemon juice
- 1 tbsp Prepared horseradish
- Your favorite hot sauce to taste
Create Remoulade
Combine remoulade ingredients in a bowl and set aside
1 cup Mayo, 2 tbsp Dijon Mustard, 1 dash Worcestershire sauce, 1 dash lemon juice, Your favorite hot sauce, 1 tbsp Prepared horseradish
Cooking Andouille
Cook the andouille sausage using your preferred method (grill, griddle, cast iron pan, etc)

Prepare the toppings
Sauté green pepper, onion, and celery until softened and season with Bayou Blend to taste.
1 Green Pepper, ½ White or yellow onion, 2 stalks Celery
Mix fire roasted tomatoes with pepper, onion, and celery mixture. Cook for a few minutes
15 oz Can of Fire Roasted Tomatoes
Prepare Shrimp
Cook shrimp and season with Bayou Blend to taste. You only need to warm shrimp if using precooked.
18 Shimp, Colonel De Spices Bayou Blend or Similar Cajun Seasoning
Assemble
Place cooked sausage in roll, top with vegetable mixture, shrimp, and top with remoulade.
