Smoked Spare Ribs

Ingredients
  

  • 1 slab of spare ribs
  • Grill Your Ass Off Infidel Pork Rub or your favorite rub
  • 5 tbsp Unsalted butter
  • 2 tbsp Honey
  • 2 tbsp Strawberry jalapeƱo pepper jam or your favorite pepper jelly

Instructions
 

  • Fire up your smoker to 250-275. I used my Cotton Gin drum smoker which tends to run a little hotter than other smokers. I like to use post oak for my smoking wood, but apple or cherry work just as well.
  • Remove membrane from underside of ribs.
  • Season both sides of the ribs liberally with Infidel Pork Rub and let the ribs rest on the counter for about 30 minutes to let the rub sweat into the meat.
  • Once the smoker reaches temp, place your ribs meat side up on the rack and let them smoke for about 2 1/2 hours or until ribs reach about 150-160 degrees.
  • When ribs are ready to wrap, lay down a sheet of foil and place 4-5 pats of butter on the foil. Then drizzle some honey over the butter and lay the ribs meat side down on the butter and honey mixture. You could also use brown sugar, agave, or maple syrup instead of honey.
  • Wrap the ribs tightly in the foil and place them back on the smoker for another hour or so or until ribs reach a temp of about 200 degrees. The meat should be pulled back from the bones at this point.
  • Remove the ribs from the foil and place directly on the smoker. Then glaze the ribs with the pepper jam and let them smoke for another 15-20 minutes or until the glaze is nice and tacky.
  • Remove the ribs from the smoker and let them rest for 15 minutes.
  • Slice them and enjoy!
